Curry Leaf Chilli Chicken

It was a refreshing holiday this time. A holiday reserved for cooking, travelling and resting. A holiday to admire Mother nature and for family reunions. A holiday that slowed down the normal frenzy of activities. All 4 days went by like a whirlwind. From short picnics to park walks and enjoying the beauty of the nature's simple pleasures, sitting by the passing springs, chatting with friends, barbeque time near the beachside, and yeah, lots of sleep.



The holiday hangover seems heavy now. Today, I am sitting at my desk keen to catch up on the piles of messages that were left behind. I have a few pictures from one of the picnics that we had. We visited the largest dam in Oman called the Wadi Dayqah dam which is a favorite picnic spot for most tourists. It is a one-hour drive from Muscat and is located in a place called Quriyat.  With sprawling lawns and breadth-taking views, it is a pleasure to travel to this land locked with mountain ranges all around. This dam serves as a major source for drinking water to most regions of Oman. It was opened in 2012. Have a look at some of the pictures below.







Holidays also means cooking. We were out most days, but the cooking never stopped. I got a chance to make simple picnic lunches ranging from appetizers to finger foods and one pot meals. Today's recipe was also one of the new appetizers that I tried out for the picnics. We call it curry leaf chilli chicken. The dish is a spicy treat donned with a marinade dominated with curry leaf flavors and then baked to perfection. A new flavor to be marked and it is sure to win hearts with its appetizing looks.

Have a look at the recipe below:

INGREDIENTS:

1/2 Kg boneless chicken cubes
1 mediun sized cinnamon stick
1 tsp green cardamom pods
1 tsp whole cloves
1/2 tsp black peppercorns
1/2 cup fresh coriander leaves
18 fresh curry leaves
1 lemon juice
2 tsp finely chopped green chillies
2 tsp fresh ginger, grated
2 tsp tamarind concentrate
2 tsp garlic, crushed
Salt to taste
1/2 tsp turmeric powder
2 tbsp Oil

HOW TO MAKE:

1) Grind the cinnamon, cardamom, cloves and peppercorns to a powder.
 
2)  Add the coriander leaves, curry leaves, lemon juice, chilli peppers, ginger, garlic, tamarind, turmeric and salt. Process to a paste.
 
3) Marinate the chicken pieces with this spice paste for at least 30 minutes, sprinkle oil on top and bake in  a pre-heated electric oven at 240 degrees Celsius for 20 minutes or till done.
 
4) I also deep fried a handful of curry leaves until crisp and sprinkled on the chicken after baking. Serve hot.

Tandoori wings with cucumber yoghurt

During our Eid holidays, we decided to travel 270kms from Muscat to the famous and the highest Mountain range of Oman called the Jebel Shams.

Jebel Shams is to Oman, what the Grand Canyon is to the US.  It is a part of the Al Hajar Mountain range in Oman which is a popular sightseeing place. When I say mountains here, they are plain rocky ones with almost no vegetation on them. In other words, they are dry and you get to see a few water falls here and there. Also, you often see the mountain goats and camels grazing extensively. The sceneries are tremendous and offer you spectacular views of the dense rocky mountain ranges spread majestically. The weather is pleasant all through the year and is heavenly during the winters.

So we had planned to travel for the day to this beautiful place as we were trying to flee hot weather from our Muscat city. And we were not very happy after reaching there as it was quite warm even on the hill. We decided to finish our lunch and then travel to the nearby cities and explore them. We had no maps, no plans. Only a drive using the directions. And then we were lucky as we drove to see the clouds gathering up quickly over the mountain range. We continued to climb on a hill that enveloped the city of Al Hamra. When we reached it, a captivating sight welcomed us. Rain !!! It rained heavily with strong thunders and lightining. Now rain is something we haven't seen since the last 6 months here and getting to see it on a holiday is something beholding.

It rained for an hour and we knew that our day was made. Our travel was worth the effort and the long distance. The place was called as Misafat Al Abriyeen.  It was a water spring and we enjoyed it. Then we travelled back down the hill and entered the beautiful city called Bahla to explore it. It was 9 p.m. when we started back to Muscat.

Interiors in Oman is where you get to see the real Omani culture. It is 5 years now since I came to Muscat and I have been living here watching the locals and adopting their styles, enjoying their cuisine and culture. But when I travel to the Interiors of Oman, I get to see the actual Omani culture, their hospitality, their living styles etc etc.

We all know that Omanis are lovely, friendly and hospitable people. I have many examples which demonstrate their generosity and their loyalty. We have witnessed it on many occasions and I feel very lucky to have been given this chance to live in this amazing country. I have many good Omani friends at my workplace with whom I do spend a lot of time. We chat about everything on this earth, we share pictures of our families, we talk about our past lives and our culture, we go out together, share food, exchange recipes etc.

And this is how and why I keep trying out mostly Arabian influence dishes these days and I do it by giving it some Indian twist and we love them.

I could not contain my excitement when I found another appetizer recipe for chicken wings. It was surreal. I had  found my way back to India but via the Arabian peninsula.



The below pictures will give you a fair idea of where and how I spent the Eid holidays.






Here is the tantalizing recipe for the tandoori Chicken wings:

INGREDIENTS:

1/3 cup tandoori curry paste
1/2 cup plain yoghurt
2 tablespoons chopped fresh coriander
1.5 kg chicken wings

Cucumber yoghurt

1 cucumber, grated
2 tablespoons chopped fresh mint leaves
1 cup plain yoghurt

HOW TO MAKE:

1)  To make the cucumber yoghurt: Combine cucumber, mint and yoghurt in a bowl. Season with pepper. Cover. Refrigerate until needed.

2) Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Combine curry paste, yoghurt and coriander in a large bowl. Add wings. Toss to coat. Transfer to prepared tray.

3) Bake for 50 minutes or until browned and cooked through. You can also grill them if you like. 

4) Serve tandoori wings with cucumber yoghurt, rice, mint and lime wedges.

Dubai Visit - Day 5

We are on to our last day of our Dubai Holiday and since we were boarding the late evening flight back to Muscat, we closed our sight-seeing session at 3 p.m.
 
Well, we kept easy accessible places for this day so that we could wind up things early. From friends feedback, no Dubai trip is completed without visiting the Gold Souk at the Diera Souq. So out of curiosity we hired our taxi and were off to Diera again.
 
While driving to Diera, we passed by the Grand Hyatt Yatch club and decided to make a short stop at this place for a brisk tour. And ended up clicking a few pictures.

Twenty minutes later, we were again driving to our destination - Diera Gold Souq.

Our cab driver left us at the entrance and there we stood watching in awe and admiration elegant and innumerable collections of jewels show cased in every shop. And they were several shops in that area with kgs and kgs of Gold. Gold showrooms in every nook and corner of the souq with lovely glinting designs which is sure to make you a confused soul while you struggle to purchase something. It is worth the visit whether you want to buy or not.

Gold prices here are amongst the lowest in the world and is largely determined by the gold weight. And they have so many ways to promote their products from raffle draws to discounts and free gifts and several customer drawing schemes. Do you know that Dubai is popularly known as "the city of Gold" ? And I wholeheartedly agree to it after visiting this filthy rich place...... Sigh !!! How lucky could be the ones who are owning a shop at this place .....
 
After an hour of admiration and totally soaked in the gold atmosphere, we walked a little further to see textiles shops and we decided to buy gifts to our near & dears. The souqs here reminded us of our Indian Bazaars because they looked so identical and we could see a lot of Asians here. Hardly any Emiratis. We could see variety of things here and could bargain and products here do not have fixed prices unlike how it is the malls.
 
And while we shopped and gathered our shopping bags, we could feel tiny drops of rain falling onto the busy streets which gradually gathered momentum for a 20-minute drizzle. So much to remind us of our India because rain is a common sight there unlike in the Middle east. Felt very nostalgic !!!
 
Similarly, Dubai has many more souqs like the ones in Bur Dubai and Jumeirah and other old places of Dubai. These Souqs are the business centers of Dubai with several small shops beyond malls and skyscrapers and luxury.
 
As the curtains were coming down for our memorable Dubai trip, we flipped through our cameras rewinding our stay there - yes, we did enjoy a lot ... but we also missed out so many places in Dubai to see because Dubai is so huge and so wonderful that 5 long and busy days are also not enough to cover the whole of Dubai. And if I tell you what all we missed to see, you will wonder what we actually saw and why on earth we missed out on all these lovely places .... Jumeirah beach, the desert safari, Dubai marina, Dubai creek, wild wadi water park, Ferrari world, Yas island, mono rail ride, global village, Sharjah amusement park, miracle garden etc etc  .... I need another week for these ....
 
We grabbed some sandwiches for a quick lunch and were off to the nearest Metro station to board the Metro and reach Rashidiya station which is the last stop for the Metro. We got down in Rashidiya and hired a taxi to reach back home for our remaining packing.

Then we were off to the airport to board our flight back to Muscat - our home where our heart always is. I realized that I actually missed my home all these days. Felt excited to reach home late that night. And we surely were looking forward to get back to work ... enough of holidays and enough of rest !!! wink .... wink ....

Day-4 --- Abu Dhabi Visit




Abu Dhabi travel day was quite a long day for us. We started early enough from Dubai so that we reach Abu Dhabi atleast by 10 a.m. We left it to our Chauffeur to take us to all the good places worth seeing in Abu Dhabi.
 
Abu Dhabi is basically a small Emirate which can be covered in a day. But it is such a beautiful place and so well developed, that it leaves you awe-struck with its innumerable and amazing places that it offers you to see. It has unique shaped buildings, towering sky scrappers, incredible beaches and wonderful people.

We first reached the Emirates Zoo. We spent an hour and a half here taking pictures and watching the fauna. It was a small zoo and we could explore it quickly.

Our next destination was the Corniche area/beach front. Corniche area is best for a night view. Since we had plans to reach back Dubai by sunset, we were forced to have a glimpse of the corniche area during the day. The day view also was so alluring and the entire 8-10 Kilometres corniche stretch had sky scrappers lined on one side and a magnificent beach view on the other with clear blue water and white sand .... something that left me fascinated. And we took a few pictures and were off to other destinations.

 Our next stop was at another magnanimous castle called the Emirates Palace. Oh, this was the pick of the day for me. This is basically a 5-Star luxury Hotel with a private beach and a Yatch Club which can also be toured by visitors for sight-seeing. The sceneries around it, the imperial structure, the water fountains, the lawns and the hospitality was amazing..... amazing. We walked around the place exploring every nook and corner and taking beautiful pictures. Inside views were splendid, and we were able to see a few restaurants, ball rooms, elegant pieces of furniture, enchanting ceilings and a grandiose architecture. A fanciful experience. After spending 2 hours in this idealistic atmosphere, we left for more sight-seeing.

But then we had to stop-over somewhere for lunch and we decided to have it in one of Abu Dhabi's distinguishing mall called the Marina Mall. This way we did a brisk tour of the mall and headed to the Food court where we chose to devour on Italian cuisine - broccoli pizza with white sauce, beef lasgna and some cheese rolls.

Soon after lunch we were off to our last place which just could not be missed when you are in Abu Dhabi - The breadth-taking Grand Mosque called the Sheikh Zayed Mosque.

 With 82 domes and pure white Italian & Greek marble, this Mosque boasts of being an architectural wonder in the world incorporating both Islamic and modern architectures. It also boasts of the largest mosque dome in the world. Exquisite lawns and clear blue water pools leaves you awe-struck. And the Mosque interiors provide you with a heavenly look. The delicate décor work on the celling and the walls makes you wonder with what degree of accuracy the work has been carried out during its construction. Oh, and you cannot take your eyes of the grand Chandeliers and just when you begin to feel tired admiring the elegantly designed roof and the gorgeously printed pillars, the carpet's view opens up a new chapter for astonishing richness. The mosque's arches and the inner yards show off an artistic portrait worth framing.
 
We offered the evening prayers at this mosque and started back to Dubai carrying with us bountiful memories of this place. Two other awesome places that we could not visit in Abu Dhabi were the Ferrari world and Yas Island. Because of our little one who cannot be managed in an amusement park. So we have bookmarked them for our next Abu Dhabi visit which is likely to be planned after a few years or so as currently our travel feet are itching for other popular places.
 
We reached Dubai by 7 p.m. We decided to go for more sight seeing here, but before that we headed home to refresh ourselves. And then we went on a long drive to reach the Arabian Center where we dined in a popular food court called the Mandilicious  for some scrumptious authentic Arabian Mandi food which was so yummy that we attacked it greedily until we gave up weakly.

We went back home and started to pack our stuff because we had less than 24 hours now to fly back to Muscat as our incredible Dubai holiday was at its sunset level now. And we fell asleep by mid-night so that we could attack our last day at Dubai with the residual amount energy that we had.
 
So Day-5 was our last day in Dubai and I do have a few more things about it which I shall write them down in my next post. Till then I hope you enjoy the pictures that I have posted.
