Hi Aysha! Thanks for your comment on my blog. For general cupcake tips, I would recommend reading my post where I list the tips I swear by for success: http://www.6bittersweets.com/2011/10/tips-for-cupcake-success-and-halloween.html
ReplyDeleteBut really one of the most important things is to have a good recipe, and I can't really give you advice with confidence except for my own recipes. I don't recognize the proportions you gave in your comment, so I'm guessing it was not a recipe from my site?
It sounds from your description that you probably baked your cupcakes at too high a temperature. I would recommend baking at 165-180 degrees C for 18 to 23 minutes for most cupcake recipes. At least where I am, many ovens actually bake hotter than you set them, so you may want to get an oven thermometer to ensure the oven is at the temperature you want. Lastly, 4 eggs sounds like too much for 18 cupcakes. No adjustments can fix the result when the recipe proportions are wrong, so I recommend trying another recipe and checking out my tips. Good luck!
