The Weekend Luncheon

I had a  fairly good weekend. Since I live in the middle east, my weekend falls on the thursday and friday. The first half of thursday was spent at the workplace. What remained was just a day and a half which flew like a wink. By the time it was friday evening, I wondered where the weekend went. Weekends look good from a distance. But they fly so fast that we never notice  until we realise that they have ended. The effect of saturday looms largely on the friday evening itself.

The best part of Weekends are that they clear away the rust of the whole week. Even sleeping for an extra hour helps to wash some of the stress built during the work filled weekdays.

So what did I do in the weekend?  This weekend I managed to do a good amount of cooking as we hosted a lunch for my in laws who are leaving on a 15 day religious trip to the holy cities of Mecca & Medina. The lunch was arranged on the friday afternoon. We organised a light assorted meal with meat dishes forming the main course and veg dishes filling in for the side dishes.

Our step by step menu is as follows:

For the Salad Course : A simple veg salad platter with chopped onion and fresh tomato serving as the platter bed with round cucumber slices arranged in the sides forming the platter wall. A traditional viniagrette dressing made up of honey, olive oil, vinegar, pepper and herbs added to the salad's flavour.

For the Main course:  The main course comprised of a rich mutton biryani along with a spicy baked chicken. Baked chicken was accompanied with baked potatoes and sweetened spring onion slices.

The Side dishes : A creamy Coleslaw kicked up with a special blend of mayonnaise, sugar, cream & a dash of pepper along with a simple Onion raita filled in for the side dishes.

The Dessert : A plain cheese cake with a raspberry jelly topping played for the Dessert.

Recipes for these will soon be posted.
